Simple, Delicious Roasted Chicken

Makes 4 servings

Ingredients:
One 2-3 pound chicken
Kosher salt and freshly ground black pepper
2 tsp minced thyme (optional)

Directions:
1.  Preheat the oven to 450 degrees.

2.  Rinse and clean chicken.  Dry it very well with paper towels, inside and out.  Salt and pepper the cavity, then truss the bird.  Trussing helps the chicken to cook evenly.  Salt the chicken so that it as a nice uniform coating.  This will give it a crisp, salty, uniform skin.  Season to taste with pepper.  

3.  Place the chicken in the roasting pan and cook for one hour in the preheated oven.  Remove from the oven and add thyme (optional) to the pan.  Baste the chicken with the juices and let it soak in for 15 minutes on a cutting board.  Remove the twine and enjoy!
